Unforgettable our totally rainy liquorice research trip to Finland around midsummer. There we got to know liquorice in Snapsi. The Finns love it with salmiak, which is then called Koskenkorva or Salmari. Whether it's midsummer or sauna, liquorice in all aggregates is a must. Even more special is the Snapsi with Terva (birch tar) - licoricey and smoky, you have to work for it if you're not a Finn. Skol!

Our old "National" cash register from 1920 is the most photographed object in the shop. Frank bought it at the flea market from a florist who wanted to give it away in good hands. Amarelli and Zagarese, two liquorice companies from Calabria, offer their pure liquorice in beautiful boxes. Quality and design - both are simply right here. Amarelli has existed in Rossano since 1731 and has a cute liquorice museum there. Actually, they wanted to grow citrus fruits, but the "weeds" were stronger. On closer inspection, it turned out to be liquorice root and Amarelli changed industries. To black luck.

Läkerol does NOT come from Switzerland. In Switzerland, liquorice is dressed up as "bear poop", which you don't need to have at home. Since 1909, the liquorice pastilles have been made in Sweden with mint, violet, cassis, sea salt, salmiac salt ... the little boxes fit in every trouser/handbag and have been travelling the world ever since.

In Bassano del Grappa, Veneto, on the village bridge, grappa is served by the winegrowers of the wine region. Grappa and fruit juice, basta. The Poli company caught our eye, of course, because it has Grappa di Liquirizia in its range, a fine grappa with liquorice. The Scandinavians also know liquorice in liquid form. That's where Snapsi is at home, often with ammonia. Cough syrup for adults - Skol! Liquorice tea or French liquorice lemonade do not require alcohol and are a delight on cold and hot days.

In the south of France, people know what quenches thirst: liquorice lemonade. It makes use of the thirst-quenching properties of natural liquorice. Add 2-3 dashes to mineral water or apple spritzer, ice cubes, umbrella and enjoy the summer by the sea from a shady spot. Antesite is a liquid liquorice concentrate, available with aniseed, mint, grapefruit and lemon ..... the concert of cicadas joins in of its own accord.

Lakrids by Johan Bülow. Suddenly this young man from the island appeared and did something different: liquorice core in chocolate marble. Until then, kadó had only known this type from Iceland, but Johan developed it further and experimented with good flavours. This has become a trademark of its own. The marbles are always of good quality, always extraordinarily inventive and simply delicious. However, they are also a little expensive. Liquorice pralines, that is.

In 2010, we flew to Iceland for liquorice research. We felt like the only non-Icelandic people on board. All the other 200 passengers greeted our seat neighbour personally. "Hey Helgi." Arrival Reykjavik and we were guests at his concert for the next evening, cool start! All the time the "Eiafjällajökjöl" volcano was smoking, visible, audible and noticeable from afar. The earth trembled and sounded quite hollow, you couldn't help but think of bowling. We returned with samples of Kulur, Piparperlur and Rjomasukkuladi - all chocolate with liquorice. The pallet came by ship, taking 3 days to reach the port of Hamburg. After paying the import tax, the liquorice still has to pass customs. By the way: the counter for the rental car was not manned at departure. Relaxed, we handed the car keys to someone who said he would pass them on to the bookseller, who in turn would meet the car rental agent in the evening. That's fine.

"Sugar-free" has long since ceased to mean tasteless. Liquorice without sugar is available in many delicious varieties: sweet and mild, (double) salted or with wine gum. The sugar is replaced by sugar substitutes, a mix of sweeteners such as xylitol, stevia or maltitol. The starch from birch sugar, stevia and maltitol tastes sweet and has few calories.

Our liquorice presents. These beautiful cubes in Japanese design are handmade for kadó by the box makers of the Blind Workshop in Berlin Kreuzberg. They hold 250g of liquorice, a feast for the eyes and the palate in one!

The decorative boxes from kadó show the leaf of the liquorice bush, Glycyrrhiza glabra, from the outside. Inside, we fill them with our European liquorice delicacies, which are cooked from the roots of the plant. Since 2015, you can also find the neat tins on the 6th floor of the KaDeWe department store. The liquorice subscription from kadó is a popular gift. Liquorice arrives regularly around the 10th of the month in a solid A5 envelope in the letterbox. Oh gosh, what advice we were given. From all sides: the losses due to inclination scales. "You won't make it on the green branch that way!" The scales themselves weigh exactly and are calibrated. What was meant was the employees' mental arithmetic skills, as they have to calculate the price of the balanced amount of liquorice in front of the customer using the rule of three. To this day, this is a fixed criterion for employment, which has sometimes brought tears to the eyes. Remember: all kado-lettes can do mental arithmetic, first at the scales, then at the checkout. So: if 100g costs 2€, how many grams are 5€ ... need a handkerchief?

The salmiak pastille is probably the best-known type of liquorice in Germany. Here 2 properties come together: the soothing effect of pure liquorice on the throat and bronchial tubes and the disinfecting effect of salmiak. Salmiak is a rock salt and tastes sourly salty. Whereas in the past every pharmacy cooked its own recipe, in Germany it is mostly pharmaceutical companies that offer salmiak pastilles. This is not the case in other European countries. kadó has 5 different salmiac pastilles manufacturers on offer.

We are changing our mainstay from offline to online and will be moving to our liquorice warehouse at Graefestrasse 68 from 19.9.2021. Who hasn't smoked the liquorice pipe? In the past with a foamy head, today with glowing crumbs - but the feeling has remained. 3 liquorice recipes are produced to order for kadó: Cinnamon liquorice, sea salt liquorice and ginger liquorice. We can show how liquorice is made with our ginger liquorice. The latter can be purchased in the fancy 80g jewellery box. I commissioned a food lab and was able to peek over the shoulders of the liquorice cooks for 3 days while they developed the recipe. Here's a glimpse into the lab kitchen. Afterwards, we received the invoice and the recipe for the ginger liquorice with the advice to find a liquorice producer. We found one in Brussels and now our ginger liquorice comes from there regularly, but try it for yourself!

No, we do NOT produce all liquorice varieties ourselves. We import liquorice. All the typical liquorice flavours from the European countries. If you want to enjoy this variety of liquorice on your tongue, choose the right liquorice mix from kadó liquorice-mixes: mild, sweet, tart, salty or salmiaky. These contain all the varieties of this flavour, from Iceland to Sicily. Our house mix, the kadó mix.

Here we are on the sweet and mild side of the liquorice life. We sorted by taste at kadó and here, on the right, all the liquorices in the mild&sweet category from Europe were close together and came together in one bag. Sweet liquorice is usually a little softer in consistency and more colourful, for example the fruity filled rolls or the colourful, crunchy one liquorice dragées. The soft liquorice is often sprinkled, as with the well-known pretzels or the delicious blackberry liquorice. Of course, the snails must not be missing: may it be the German one, the Italian one or the one from Iceland?

The kadó cooking box contains a jar of liquorice granules, a bottle of salty liquorice syrup, a jar of liquorice-apple chutney, a liquorice, a natural liquorice stick and 2 recipes: Goulash and pear jam, both with liquorice - self-tested and delicious. The syrup goes perfectly with (lemon) ice cream, the granules add zing to pasta/cake dough, the chutney decorates mozzarella tomato, cheese platter or fish, liquorice spices up the stock and the liquorice stick turns into crunchy liquorice chips over the sharp grater. Anyone who has ever been to a liquorice tasting at kadó will have tasted how deliciously liquorice powder enriches the kitchen.

Inspired by our booklet, the weekly newspaper "Die ZEIT" illustrated the map of the "black gold of Europe". It shows countries from Iceland to Sicily, each with its typical liquorice. The whole taste of european liquorice in one bag is called our house mix or, for short: kadó-Mix.

The decorative bags from kadó with a viewing window are popular souvenirs, also available at Kadewe. Designed by kadó, they come with the marble mix (chocolate balls with liquorice cores), the salty crumb mix (you should really like salt liquorice) and the Berlin mix (a mixed double of sweet liquorice and sour drops like the wonder bags of yesteryear). This liquorice counter shows liquorice mainly from Southern Europe, they are sweet and at the same time tart in taste because of their higher liquorice content. These varieties are produced in smaller family businesses. From France, Italy and (the not so southern) Brussels come the traditional liquorice recipes with natural flavours of violet, citrus, mint, laurel, elder, anise, cedar. Cooked with gum arabic, they have a firm consistency, reduced to jelly they are soft. High quality craftsmanship and close to the original taste - all combined in the sweet and tart liquorice mix from kadó.

For all of you who can't get to know our shop for real now: we've sorted the liquorice by taste and here's the salty/salmacious side. kadó really does import all the original liquorice varieties from the liquoriceophile countries from Iceland to Sicily. Sometimes a liquorice variety is "out of stock" for a short time. That is, until the order round comes around again.

A quick look behind the scenes at our temporary storage facility. The walls are full of shelves with liquorice. To help you find your way around, there are cards in front of the shelves: a green card indicates the salty variety, a yellow card indicates the sweet variety. You should be free from giddiness, because that's how it goes up to the ceiling.

Liquorice marzipan in white chocolate, a hit! Handmade in northern Germany - you have to try it. A delicious piece of craftsmanship. In general, kadó is all about tasting, hence our mixes, which can be selected according to taste. Then the whole spectrum comes under the palate for selection. In addition to scales and crank cash registers, we work at kadó with paper cone bags. These keep the liquorice closed with a special folding technique. Just good for on the road or togo. The nicest thing for us kado-lettes is to see that the liquorice bag is usually opened and tasted by liquorice customers, of all ages by the way, on the doorstep on their way out. Whether big or small liquorice monster, some things never change.

The nice thing about starting a meeting place for liquorice lovers is that sometimes liquorice darlings come to you. Such is this advertisement, probably from the 1930s in the original. The graphic designer of the company "Düsseldorf-Lakritzen-Verkaufs-Gesellschaft M.B.H." vacated his office and bequeathed these hand-drawn lithographs to kadó. They are contemporary witnesses, also from an ethnological point of view, when "Negergeld" was still the name of a type of liquorice. And that is not sooo long ago.

The shop fittings for kadó were designed by Dirk Soboll, photographer and architect, and built by Tischlerei Heinks. For days in 1997 we discussed what a liquorice shop could look like and the resulting jobs. For 24 years it has given impeccable service to customers and liquorice. A clear, beautiful, fresh, timeless corporate design of kadó. Not for sale, of course. When it moves out, it will be given away piece by piece into good hands: as a bookcase above the fireplace in the restaurant, as an organiser for screws & dowels in the carpentry workshop, as a design surface in an art workshop, as a tray at the employee's atelier ... In order to be of use for the new tasks there, too, in an unagitated way. Thank you, it was nice working with you.

At first, new employees are amazed at the amount of manual work at kadó and despair at the variety of liquorice, where each type is called something different: Filidutter, Rosella, Bosbessen is written on it and blackberry liquorice is in it, 8 x double salted, urgs. But we are well structured and soon the liquorice meme inhaled "do we still have griotten?" - arrived! Maike had taken home a list to practise. The first liquorice customers still know us from the weekly market. It all started at the Winterfeldtmarkt until we opened our first shop at Graefestrasse 75. In 2008, we moved across the street to Graefe 20, where a wonderful 13 years have come to an end. Many thanks to the customers from all parts of Berlin and from the neighbourhood for the conversations and liquorice small talk over the liquorice counter. To the kids for showing their school reports and the self-painted pictures. To the liquorice fans from out of town who made a point of visiting our liquorice shop during their visit to Berlin. Liquorice lovers of all ages, from all walks of life, met at kadó.

A woman comes into the shop with a little girl. We chat about liquorice, the kadó atmosphere of a merchant's shop and the not uncommon question comes at the end: "And you can live of that?" Days later, the customer tells us that her granddaughter seemed to be preoccupied with this question, because she wanted to know exactly in the evening: "Grandma, do they only have liquorice in the fridge?"
